Ingredients

2 ripe bananas

1/2 cup creamy or crunchy peanut butter (or almond butter)

1/2 cup semi-sweet chocolate chips (or dark chocolate chips)

1/4 cup shredded coconut (unsweetened)

1 tablespoon honey or maple syrup (optional, for added sweetness)

Sea salt, for sprinkling

Instructions

Prepare the Bananas: Peel the bananas and slice them into thick rounds, about 1/2 inch thick. Place the banana slices on a parchment-lined baking sheet.

Nut Butter Spread: In a small bowl, if using, mix the peanut butter (or almond butter) with the honey or maple syrup until smooth and well combined.

Assemble the Bites: Take a slice of banana and spread about 1/2 teaspoon of the nut butter on top. Place another banana slice on top of the nut butter to create a mini sandwich. Repeat with all banana slices.

Chocolate Coating: Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each one until smooth. Dip each banana sandwich into the melted chocolate, allowing any excess to drip off.

Toppings: Sprinkle shredded coconut and a tiny pinch of sea salt on top of the chocolate-coated banana bites before the chocolate sets.

Freeze: Place the baking sheet with the assembled banana bites into the freezer for about 1-2 hours, or until the chocolate is fully hardened.

Serve: Once frozen, transfer the bites to an airtight container or zip-top bag. These can be stored in the freezer for up to 2 months. Enjoy them straight from the freezer for a quick, healthy treat!
