Ingredients

1 ripe pineapple

1 cup dark chocolate chips

1 tablespoon coconut oil

Sea salt (optional, for garnish)

1/2 cup shredded coconut (optional, for rolling)

Wax paper or parchment paper

Instructions

Prepare the Pineapple: Start by cutting off the top and bottom of the pineapple. Stand the pineapple upright and carefully slice off the skin, following the curve of the fruit. Cut the pineapple into thick wedges or chunks, as per your preference. Insert wooden skewers into each piece for easy dipping.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave on high for 30 seconds, then stir. Repeat in 15-second intervals until fully melted and smooth. Be careful not to overheat the chocolate to avoid burning.

Dip the Pineapple: One at a time, dip each pineapple wedge into the melted chocolate, allowing any excess to drip off. If you like, you can also roll the chocolate-dipped pineapple in shredded coconut for an added tropical twist.

Set the Pineapple: Line a baking sheet with wax or parchment paper. Place the chocolate-dipped pineapple pieces on the prepared sheet. If desired, sprinkle a pinch of sea salt over each piece for a touch of contrast.

Freeze: Transfer the baking sheet to the freezer and let the pineapple chill for at least 1-2 hours or until the chocolate is set and firm.

Serve: Once frozen, serve immediately for the best texture. You can keep any leftovers in an airtight container in the freezer for up to 2 weeks.
