Ingredients

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup shelled pistachios, roughly chopped

A pinch of sea salt

Optional: Dark chocolate chips for topping

Instructions

Mix the Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, cocoa powder, and sea salt. Whisk until the mixture is smooth and well combined, ensuring there are no lumps.

Prepare Pistachios: Chop the shelled pistachios into small pieces. You can place them in a zip-top bag and crush them with a rolling pin for a finer texture if preferred.

Combine Ingredients: Gently fold the chopped pistachios into the yogurt mixture, ensuring they are evenly distributed.

Fill the Cups: Line a muffin tin with cupcake liners or use silicone molds. Spoon the chocolate yogurt mixture into each cup, filling them about 3/4 full.

Add Toppings: If desired, sprinkle a few dark chocolate chips on top of each cup for an extra touch of decadence.

Freeze: Place the muffin tin or molds in the freezer and freeze for at least 4 hours, or until fully set.

Serve: Once frozen, remove the cups from the muffin tin or molds. If using a metal tin, you may need to run warm water on the bottom to help release them. Enjoy immediately or store in an airtight container in the freezer.
