Ingredients
  

1 cup fresh or frozen mixed berries (such as strawberries, blueberries, and raspberries)

1 cup unsweetened shredded coconut, divided

1 cup full-fat coconut milk

1/4 cup maple syrup or honey (adjust to taste)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional: 1/4 cup chopped nuts (such as almonds or walnuts) for added texture

Instructions
 

Prepare the Base:

    In a food processor, combine 3/4 cup of the shredded coconut, coconut milk, maple syrup, vanilla extract, lemon juice, and salt. Blend until smooth and creamy. Scrape down the sides as needed to ensure everything is well combined.

      Layer with Berries:

        In a mixing bowl, gently fold in the berries (if using fresh, slice them if large). If using frozen berries, allow them to sit at room temperature for 10-15 minutes to slightly soften. Stir until the berries are evenly coated with the coconut mixture.

          Pour and Spread:

            Line an 8x8 inch (or similar size) baking dish with parchment paper, leaving some overhang for easy removal later. Pour the coconut-berry mixture into the dish and spread it out evenly using a spatula. Sprinkle the remaining shredded coconut over the top, and if desired, add the chopped nuts for extra crunch.

              Freeze:

                Cover the dish with plastic wrap or a lid and place it in the freezer. Freeze for at least 4 hours or until completely firm.

                  Slice and Serve:

                    Once frozen solid, remove the dish from the freezer. Lift the mixture out using the parchment paper overhang and place it on a cutting board. Using a sharp knife, cut into square or rectangular pieces. Let sit at room temperature for a few minutes before serving for easier cutting.

                      Store:
