Ingredients

For the Crust:

1 cup all-purpose flour

1/4 cup powdered sugar

1/2 cup unsalted butter, softened

1/4 teaspoon salt

For the Filling:

2 cups fresh or frozen blueberries

1 cup granulated sugar

1/4 cup fresh lemon juice (about 2 lemons)

1 tablespoon lemon zest

3 large eggs

1/4 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

For the Topping (Optional):

1/4 cup powdered sugar for dusting

Fresh blueberries and lemon slices for garnish

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang to make it easier to lift out the bars later.

    Make the Crust:

      - In a medium bowl, whisk together 1 cup flour, 1/4 cup powdered sugar, and 1/4 teaspoon salt.

        - Add the softened butter and mix until crumbly and blended.

          - Press the mixture evenly into the bottom of the prepared baking pan.

            - Bake for 15 minutes or until the edges are slightly golden. Remove from the oven and let it cool slightly.

              Prepare the Filling:

                - In a large mixing bowl, combine the blueberries, 1 cup granulated sugar, lemon juice, lemon zest, and eggs. Whisk until well mixed.

                  - Add 1/4 cup flour, 1 teaspoon baking powder, and 1/4 teaspoon salt. Gently fold in the mixture until combined and no streaks remain.

                    Combine and Bake:

                      - Pour the filling over the cooled crust, spreading it evenly.

                        - Bake for an additional 25-30 minutes, or until the filling is set and the edges are lightly golden. A toothpick inserted in the center should come out mostly clean.

                          Cool and Freeze:

                            - Remove the bars from the oven and let them cool in the pan on a wire rack for at least 1 hour.

                              - Once cooled, transfer the pan to the refrigerator for 2 hours, or until the bars are firm. You can also freeze the bars for at least 2 hours if you prefer a firmer texture.

                                Serve:

                                  - Once set, remove the bars from the pan using the parchment overhang and cut into squares.

                                    - Dust with powdered sugar, and garnish with fresh blueberries and lemon slices if desired.

Enjoy these delightful, zesty treats frozen or chilled!
