2 ripe mangoes, peeled and diced

1 can (13.5 oz) coconut milk (full fat for creaminess)

1/4 cup honey or maple syrup (adjust based on sweetness)

1/2 tsp vanilla extract

1 cup unsweetened shredded coconut

1/4 tsp salt

Optional: 1/2 tsp lime zest for a citrus kick

Instructions
 

Prepare the Mango: Start by peeling and dicing the ripe mangoes. You can use fresh mango or frozen mango chunks, just make sure to let frozen ones thaw slightly before processing.

    Blend the Mixture: In a blender, combine the diced mangoes, coconut milk, honey (or maple syrup), vanilla extract, and salt. If using lime zest, add it at this stage. Blend until you achieve a smooth and creamy consistency.

      Incorporate Shredded Coconut: Stir in the unsweetened shredded coconut until well combined. You can reserve a tablespoon to sprinkle on top later if you'd like!

        Prepare the Molds: Pour the mango-coconut mixture into silicone molds or an ice cube tray. If desired, you can add chopped pieces of fresh mango into the molds for added texture.

          Freeze: Cover the molds with plastic wrap and place them in the freezer for at least 4-6 hours or until fully frozen.

            Serve: Once frozen, remove the mango coconut bites from the molds. If they stick, run warm water over the outside of the molds for a few seconds. Serve immediately or store them in an airtight container in the freezer for a refreshing treat anytime!
