When crafting the perfect Fro-Zen Strawberry Bliss Pops, mastering the art of folding ingredients is essential to maintain a delightful texture. Begin by combining your creamy yogurt base with pureed strawberries in a large mixing bowl. To ensure that the yogurt does not lose its fluffy consistency, use a gentle folding technique. Insert a spatula into the mixture at one side of the bowl, lift it, and turn it over onto itself, repeating this motion until the ingredients are primarily combined. This method preserves the airiness of the yogurt, resulting in a light and creamy popsicle.

Ingredients

2 cups fresh strawberries, hulled and chopped

1/4 cup granulated sugar (adjust based on sweetness of berries)

1 cup cream cheese, softened

1/2 cup Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

1/2 cup crushed graham crackers (for coating)

Optional: Fresh mint leaves for garnish

Instructions

Prepare the Strawberries: In a medium bowl, combine the chopped strawberries and granulated sugar. Toss well and let them sit for about 15-20 minutes until they release their juices, creating a sweet strawberry syrup.

Blend the Cream Cheese Mixture: In a blender or food processor, combine the softened cream cheese, Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy, with no lumps.

Combine Mixtures: Gently fold the macerated strawberries into the cream cheese mixture. Make sure to keep some chunks of strawberries for texture.

Fill the Molds: Spoon or pour the strawberry cheesecake mixture into popsicle molds, leaving a little space at the top for expansion. If desired, insert popsicle sticks.

Freeze: Place the molds in the freezer for at least 4-6 hours or until completely frozen.

Prepare the Coating: Just before serving, crush the graham crackers in a bowl. You can use a rolling pin or your hands to break them into fine crumbs.

Unmold the Pops: To remove the pops, run warm water over the outside of the molds for a few seconds. Gently pull them out, ensuring not to break them.

Dip and Enjoy: Roll the frozen pops in the crushed graham crackers, coating them evenly. You can also sprinkle a bit of extra crushed strawberries on top for a pop of color. Serve immediately, garnished with fresh mint leaves if desired.
