2 cups fresh blueberries

1 cup vanilla Greek yogurt

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

1/2 cup granola (optional, for crunch)

Mini cupcake liners (for serving)

Instructions
 

Prep the Blueberries: Rinse the fresh blueberries under cold water and drain well. Pat them dry with a clean kitchen towel.

    Make the Cream Mixture: In a mixing bowl, combine the vanilla Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice. Stir until the mixture is smooth and well combined.

      Combine the Ingredients: Gently fold in the blueberries into the cream mixture, being careful not to crush the berries. If you want to add crunch, fold in the granola at this stage.

        Prepare the Molds: Line a mini muffin tin with cupcake liners or use silicone molds.

          Fill the Liners: Spoon the blueberry cream mixture into the lined muffin tin or molds, filling them about three-quarters full.

            Freeze: Place the muffin tin or molds in the freezer for at least 4 hours, or until the cream bites are fully frozen.

              Serve: Once frozen, remove the bites from the molds and serve immediately. Enjoy them straight away or store them in an airtight container in the freezer for up to a month.
