Frozen Watermelon Lime Popsicles

Ingredients
  

4 cups seedless watermelon, cubed

1/4 cup fresh lime juice (about 2-3 limes)

2 tablespoons honey or agave syrup (adjust to taste)

Zest of 2 limes

Pinch of salt

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Watermelon: Start by cubing the seedless watermelon and placing it in a blender. Blend until smooth.

    Mix the Ingredients: In the blender with the watermelon puree, add the fresh lime juice, honey or agave syrup, lime zest, and a pinch of salt. Blend again until everything is well combined and smooth.

      Taste and Adjust: Taste the mixture to see if it needs more sweetness or lime juice, and adjust as needed by adding more honey or lime juice. Blend again briefly to combine any additions.

        Pour into Molds: Carefully pour the watermelon-lime mixture into popsicle molds, leaving a little space at the top for expansion when they freeze.

          Insert Sticks: If your popsicle molds don’t have built-in sticks, insert wooden sticks into the center of each mold.

            Freeze: Place the molds in the freezer and freeze for at least 4-6 hours, or until completely solid.

              Remove and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds until they release easily. Serve immediately, optionally garnished with fresh mint leaves for a pop of color and flavor.
