Ingredients

2 cups plain Greek yogurt (or your favorite flavored yogurt)

1/2 cup almond butter

1/4 cup honey or maple syrup (adjust to taste)

1/4 cup almond milk (or any milk of choice)

1/4 cup poppy seeds

1 cup rolled oats

1/2 cup sliced almonds (lightly toasted)

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon vanilla extract

Pinch of salt

Instructions

Prepare the Base:

In a large mixing bowl, combine the Greek yogurt, almond butter, honey (or maple syrup), almond milk, lemon zest, lemon juice, and vanilla extract. Use a whisk to mix everything until smooth and well-combined.

      Add Remaining Ingredients:

Stir in the poppy seeds, rolled oats, sliced almonds, and a pinch of salt into the yogurt mixture until evenly distributed.

          Line the Baking Pan:

Line an 8x8-inch (or similar size) baking pan with parchment paper, leaving some overhang to make removing the bars easier later.

              Spread the Mixture:

Pour the yogurt mixture into the prepared baking pan. Use a spatula to spread it out evenly, pressing down gently to ensure a compact layer.

                  Freeze:

Cover the pan with plastic wrap or foil and place it in the freezer. Freeze for at least 4-6 hours, or until the mixture is firm.

                      Cut into Bars:

Once set, remove the pan from the freezer and use the parchment overhang to lift the frozen slab of yogurt out of the pan. Cut into squares or bars of your desired size.

                          Serve and Enjoy:

Let the bars sit at room temperature for a couple of minutes before serving, making them easier to bite into. Store any leftovers in an airtight container in the freezer.
