Ingredients

2 ripe bananas, mashed

1 cup Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1 cup rolled oats

1/2 cup crushed nuts (walnuts, almonds, or pecans)

1/2 cup chocolate chips or mini chocolate chips

1/2 teaspoon cinnamon

A pinch of salt

Optional toppings: fresh berries, granola, or additional nuts

Instructions

Preheat the oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing it.

Combine the wet ingredients: In a large mixing bowl, mash the bananas until smooth. Add the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until all wet ingredients are fully incorporated.

Mix the dry ingredients: In a separate bowl, combine the rolled oats, crushed nuts, chocolate chips, cinnamon, and salt. Stir until evenly distributed.

Combine wet and dry mixtures: Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay!

Fill the muffin tin: Evenly scoop the banana bread mixture into the prepared muffin cups, filling each about 3/4 full.

Add a crunchy topping: If desired, sprinkle a few extra crushed nuts or oats on top of each cup for an extra crunch!

Bake: Place the muffin tin in the oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cool and freeze: Once baked, remove the cups from the oven and let them cool in the tin for about 10 minutes. Afterwards, transfer the cups to a wire rack to cool completely. Once cool, place them in the freezer for about 2 hours to achieve that frozen yogurt consistency.

Serve and enjoy: Take out the cups, and if desired, top with fresh berries, additional yogurt, or granola. Let sit at room temperature for a few minutes before serving so they are easy to bite into!
