Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

2 cups mixed berries (strawberries, blueberries, raspberries)

2 cups Greek yogurt (plain or flavored)

½ cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

½ cup heavy whipping cream (optional for extra creaminess)

Fresh mint leaves (for garnish)

Instructions

Prepare the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch pie pan to create an even layer. Place the crust in the freezer to set for about 15 minutes.

Berry Preparation: While the crust is chilling, wash and dry your mixed berries. If using strawberries, slice them into smaller pieces for even distribution. Set aside.

Make the Yogurt Filling: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. If you want a creamier texture, whip the heavy cream in a separate bowl until soft peaks form, then gently fold it into the yogurt mixture until fully incorporated.

Assemble the Pie: Once the crust is set, remove it from the freezer. Pour the yogurt mixture into the pie crust, spreading it out evenly with a spatula. Gently fold in the mixed berries, distributing them throughout the filling.

Freeze the Pie: Cover the pie with plastic wrap and place it in the freezer. Freeze for at least 4 hours, or until fully set.

Slice and Serve: Once set, remove the pie from the freezer and let it sit at room temperature for about 5 minutes for easier slicing. Cut into wedges and garnish with fresh mint leaves. Serve immediately and enjoy the refreshing goodness!
