2 cups plain Greek yogurt

1 cup fresh blueberries (plus extra for topping)

1/4 cup honey or maple syrup (adjust sweetness to taste)

1/4 cup chia seeds

1 teaspoon vanilla extract

Pinch of salt

1/2 teaspoon lemon juice (optional for brightness)

Instructions
 

Prep the Base: In a large mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until well combined and smooth.

    Incorporate Blueberries: Gently fold in the fresh blueberries into the yogurt mixture. Try to keep some whole for texture.

      Add Chia Seeds: Next, sprinkle the chia seeds into the mixture and stir until they're evenly distributed throughout the yogurt.

        Taste and Adjust: Taste the mixture and adjust the sweetness with more honey or syrup if desired. A splash of lemon juice can also be added for a zesty kick if you like.

          Prepare Molds: Line a baking sheet with parchment paper or use silicone molds to make the coins. Using a spoon, dollop out small circles of the mixture (about 1 to 2 tablespoons each) onto the prepared sheet or into the molds, giving them some space as they'll expand slightly when freezing.

            Freeze: Place the baking sheet or molds in the freezer and allow them to freeze for at least 3-4 hours, or until completely solid.
