Ingredients

2 cups Greek yogurt (plain or flavored)

1/4 cup honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/2 cup chia seeds

1 cup rolled oats

1/2 cup almond slivers (or any nuts of your choice)

1/2 cup dried fruit (cranberries, apricots, or raisins)

1/4 teaspoon salt

Optional: 1/2 cup mini chocolate chips or dark chocolate chunks

Instructions

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until fully combined.

Add Chia Seeds: Gradually add in the chia seeds and mix well. Let the mixture sit for about 10 minutes. This allows the chia seeds to absorb moisture and thicken the yogurt.

Mix in Dry Ingredients: After the chia seeds have expanded, fold in the rolled oats, almond slivers, dried fruit, and salt into the yogurt mixture. If you’re using chocolate chips or chunks, now is the time to add them too!

Prepare the Pan: Line an 8x8-inch square pan with parchment paper, allowing some overhang for easy removal later.

Spread the Mixture: Pour the yogurt-chia mixture into the prepared pan. Use a spatula to spread it evenly and press it down firmly to compact the bars.

Freeze: Place the pan in the freezer for at least 4 hours or until the mixture is firm.

Cut and Serve: Once frozen, lift the bars out of the pan using the overhang of the parchment paper. Cut into squares or rectangles to your desired size.

Store: Place the bars in an airtight container and keep them in the freezer to maintain freshness. Enjoy frozen!
