1 cup coconut milk (full fat for creaminess)

1/2 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

1/2 cup shredded unsweetened coconut

1/2 cup dark chocolate chips (or melted dark chocolate)

1 tablespoon coconut oil (for melting chocolate)

Pinch of sea salt

Optional: Fresh berries or other fruit for decoration

Prepare the coconut yogurt mixture: In a large mixing bowl, whisk together the Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, and a pinch of sea salt until smooth and well-combined.

    Incorporate shredded coconut: Gently fold in the shredded coconut into the yogurt mixture, ensuring it is evenly distributed.

      Pour into molds: Carefully pour the coconut yogurt mixture into popsicle molds, leaving a small space at the top for expansion. If desired, add fresh berries or pieces of fruit to the molds for extra flavor and decoration before filling them.

        Insert sticks: Place the popsicle sticks into the molds, ensuring they stand upright.

          Freeze: Transfer the molds to the freezer and let them freeze for at least 4-6 hours or until completely solid.

            Prepare the chocolate coating: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until smooth and fully melted.
