Ingredients

4 ripe bananas

1 cup vanilla Greek yogurt

1/2 cup dark chocolate chips

1 tablespoon coconut oil

1/4 cup crushed nuts (almonds, walnuts, or pistachios)

1/4 cup shredded coconut (unsweetened)

1 tablespoon honey or maple syrup (optional for sweetness)

6 popsicle sticks

Instructions

Prepare the Bananas: Peel the bananas and cut them in half. Insert a popsicle stick into each half, ensuring it goes in about halfway through the banana.

Yogurt Coating: In a bowl, mix the vanilla Greek yogurt with honey or maple syrup if you’d like added sweetness. This will be your coating.

Coat the Bananas: Dip each banana half into the yogurt mixture until fully coated. Allow the excess yogurt to drip off.

Freeze the Bananas: Place the coated banana pops on a parchment-lined baking sheet. Freeze for about 1 hour, or until the yogurt is firm.

Melt the Chocolate Fudge: In a small microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 20-30 second intervals, stirring in between, until smooth and melted.

Coat with Chocolate: Remove the banana pops from the freezer. Quickly dip each yogurt-coated banana into the melted chocolate, letting the excess drip off.

Add Toppings: Immediately sprinkle your choice of crushed nuts and shredded coconut on top of the chocolate coating before it sets.

Freeze Again: Place the chocolate-coated banana pops back on the parchment-lined sheet. Freeze for an additional 1-2 hours or until the chocolate is completely hardened.

Serve and Enjoy: Once the chocolate is firm, your Frozen Yogurt Fudge Banana Pops are ready to enjoy! Serve immediately or store in an airtight container in the freezer for future treats.
