Frozen Yogurt Granola Cheesecake Cups

For the Crust:

1 cup granola (your choice, preferably with nuts and dried fruits)

1/4 cup melted coconut oil or unsalted butter

2 tablespoons honey or maple syrup (optional, for added sweetness)

For the Cheesecake Filling:

8 oz cream cheese, softened

1 cup Greek yogurt (plain or flavored)

1/4 cup powdered sugar (adjust to taste)

1 teaspoon vanilla extract

Juice of 1/2 lemon (to enhance flavor)

For the Topping:

Fresh berries (strawberries, blueberries, raspberries)

Additional granola for garnish

A drizzle of honey or chocolate sauce (optional)

Instructions
 

Prepare the Crust:

    In a mixing bowl, combine the granola, melted coconut oil or butter, and honey or maple syrup (if using). Mix until the granola is well coated.

      Spoon the mixture into the bottom of silicone or muffin paper-lined cups (approximately 12). Press down firmly to form an even layer. Place in the freezer while you prepare the filling.

        Make the Cheesecake Filling:

          In a large mixing bowl, beat the softened cream cheese until smooth. Add the Greek yogurt, powdered sugar, vanilla extract, and lemon juice. Continue mixing until well blended and creamy.

            Assemble the Cups:

              Remove the crust from the freezer. Spoon the cheesecake filling over the granola crust in each cup, filling them about three-quarters of the way full. Smooth the tops with a spatula.

                Freeze the Cups:

                  Transfer the cheesecake cups back to the freezer. Freeze for at least 4 hours or until solid, preferably overnight for the best texture.

                    Serve:

                      When ready to serve, remove the cheesecake cups from the freezer and let them sit at room temperature for about 5 minutes before serving (this will make it easier to remove from the cups).
