2 cups plain Greek yogurt

1/2 cup honey or maple syrup (adjust based on desired sweetness)

Zest of 2 large lemons

Juice of 1 large lemon

1 tablespoon vanilla extract

2 tablespoons poppy seeds

1/4 cup crushed graham crackers (for topping)

Fresh blueberries or raspberries (optional, for garnish)

Instructions
 

Prepare the Mixture: In a medium mixing bowl, combine the Greek yogurt, honey or maple syrup, lemon zest, lemon juice, and vanilla extract. Whisk until smooth and well combined.

    Add the Poppy Seeds: Gently fold in the poppy seeds to the yogurt mixture, ensuring they are evenly distributed throughout.

      Fill the Cups: Line a muffin tin with paper liners (or silicone muffin cups for easier removal). Spoon the mixture evenly into each cup, filling them to about 3/4 full.

        Add Toppings: Sprinkle a layer of crushed graham crackers on top of each yogurt cup for added texture and flavor. Optionally, you can place a few fresh blueberries or raspberries on each cup.

          Freeze: Place the muffin tin in the freezer and freeze for at least 4 hours or until fully set.

            Serving: Once frozen, remove the cups from the muffin tin. To easily remove them, you can run warm water on the outside of the tin for a few seconds.
