2 cups ripe peaches, peeled and diced

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust for sweetness)

1/4 cup fresh ginger, grated (adjust to taste)

1 teaspoon vanilla extract

1/4 teaspoon salt

1 tablespoon lemon juice

2 tablespoons chopped fresh mint (for garnish, optional)

Instructions
 

Prepare the Peaches: If you haven’t already, peel and dice the ripe peaches. Reserve a handful of small pieces for topping later.

    Blend the Mixture: In a blender or food processor, combine the diced peaches, Greek yogurt, honey or maple syrup, grated ginger, vanilla extract, salt, and lemon juice. Blend until smooth and creamy.

      Taste and Adjust: Before pouring the mixture into the dish, taste it. Adjust sweetness or ginger spiciness as needed based on your personal preference.
