Frozen Yogurt Pumpkin Spice Crumble Bars

For the Base:

1 ½ cups rolled oats

1 cup all-purpose flour

½ cup brown sugar

½ teaspoon ground cinnamon

¼ teaspoon nutmeg

½ teaspoon salt

½ cup unsalted butter, melted

For the Pumpkin Filling:

1 cup canned pumpkin puree

1 cup Greek yogurt

½ cup maple syrup

1 teaspoon vanilla extract

1 teaspoon pumpkin spice blend

½ teaspoon salt

For the Crumble Topping:

½ cup rolled oats

¼ cup all-purpose flour

⅓ cup brown sugar

½ teaspoon ground cinnamon

¼ teaspoon nutmeg

¼ cup cold unsalted butter, diced

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving a little overhang to help with removal.

    Make the Base: In a mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, nutmeg, and salt. Pour in the melted butter and mix until well combined. Press this mixture firmly into the bottom of the prepared baking pan to create an even layer.

      Bake the Base: Bake the base in the preheated oven for 15 minutes or until lightly golden. Remove from the oven and let it cool slightly.

        Prepare the Pumpkin Filling: While the crust is cooling, in another bowl, whisk together the pumpkin puree, Greek yogurt, maple syrup, vanilla extract, pumpkin spice blend, and salt until smooth and well combined.

          Spread the Filling: Pour the pumpkin filling over the cooled base, spreading it evenly with a spatula.

            Make the Crumble Topping: In a small bowl, mix together the rolled oats, flour, brown sugar, cinnamon, and nutmeg. Add the cold, diced butter and use a fork or your fingers to mix until the mixture resembles coarse crumbs.

              Add the Topping: Sprinkle the crumble topping evenly over the pumpkin filling.

                Bake Again: Return the pan to the oven and bake for an additional 25-30 minutes, or until the topping is golden brown and the filling is set.

                  Cool and Freeze: Allow the bars to cool at room temperature for about 30 minutes. Once cooled, cover and place them in the freezer for at least 2 hours, or until fully firm.

                    Serve: Once frozen, lift the bars out of the pan using the overhanging parchment paper. Cut into squares and serve chilled. Optionally, serve with a drizzle of extra maple syrup or a dollop of whipped cream for a festive touch.
