2 cups fresh or frozen raspberries

2 tablespoons honey or maple syrup (adjust for sweetness)

1 tablespoon lemon juice

For the Lemon Yogurt Layer:

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (to taste)

Zest of 1 lemon

2 tablespoons lemon juice

1 teaspoon vanilla extract

For Garnish (optional):

Fresh raspberries

Lemon zest

Mint leaves

Instructions
 

Prepare the Raspberry Layer:

    - In a blender or food processor, combine the raspberries, honey (or maple syrup), and lemon juice. Blend until smooth. If desired, strain the mixture through a fine-mesh sieve to remove the seeds for a smoother texture.

      Make the Lemon Yogurt Layer:

        - In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract. Whisk until well combined and smooth.

          Layer the Mixtures:

            - Take silicone donut or ring molds and start by spooning a layer of the lemon yogurt mixture into the molds, filling them about halfway.

                  Freeze:
