1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup granulated sugar

1 cup water

2 cups plain Greek yogurt

For the Raspberry Layer:

2 cups fresh or frozen raspberries (thawed if frozen)

1/4 cup honey or maple syrup (adjust to taste)

1 tablespoon lemon zest

For Garnish:

Zest from 1 lemon

Mint leaves (optional for garnish)

Instructions
 

Prepare the Lemonade Layer:

    - In a medium saucepan, combine the lemon juice, sugar, and water. Over medium heat, stir until the sugar is completely dissolved (about 3-5 minutes). Remove from heat and let cool.

      - Once cooled, whisk in the Greek yogurt until smooth and creamy.

        Prepare the Raspberry Layer:

          - In a blender or food processor, add the raspberries, honey (or maple syrup), and lemon zest. Blend until completely smooth. Taste and adjust sweetness if needed.

            Assemble the Bars:

              - Line an 8x8-inch (or similar size) baking dish with parchment paper, allowing some overhang for easy removal.

                - Pour the lemonade yogurt mixture into the prepared dish, smoothing the top with a spatula.

                  - Next, gently dollop the raspberry mixture over the lemonade layer. Use a knife or skewer to swirl the raspberry layer into the yogurt layer for a marbled effect.

                    Freeze:

                      - Cover the dish with plastic wrap or a lid, and place it in the freezer. Freeze for at least 4 hours, or until completely solid.

                        Serve:
