Frozen Yogurt Strawberry Cookie Clusters

½ cup honey or maple syrup (adjust for sweetness)

1 cup fresh strawberries, hulled and diced

1 cup oats (rolled or quick)

½ cup almond flour (or any nut flour)

½ teaspoon vanilla extract

½ teaspoon cinnamon (optional)

A pinch of salt

½ cup chopped nuts (e.g., almonds or walnuts; optional)

½ cup mini chocolate chips (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Mix the Yogurt Base: In a medium bowl, combine the Greek yogurt and honey (or maple syrup). Stir until well mixed. This will serve as the base for your cookie clusters.

    Add Dry Ingredients: Stir in the almond flour, oats, vanilla extract, cinnamon (if using), and a pinch of salt. Mix until combined; the mixture should be thick but manageable.

      Incorporate Strawberries: Gently fold in the diced strawberries, ensuring they are evenly distributed throughout the yogurt mixture. If desired, add the chopped nuts and chocolate chips at this stage for added texture and flavor.

        Shape the Clusters: Using a spoon or small cookie scoop, drop heaping tablespoons of the mixture onto a parchment-lined baking sheet. Flatten them slightly to make them resemble cookie shapes.
