2 cups Greek yogurt (plain or vanilla)

1 cup ripe strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Optional toppings: crushed nuts, granola, or mini chocolate chips

Instructions
 

Make the Strawberry Jam:

    - In a medium saucepan, combine the sliced strawberries, honey (or maple syrup), lemon juice, and a pinch of salt.

      - Cook over medium heat, mashing the strawberries slightly with a fork or potato masher. Bring to a slight boil and then reduce the heat. Simmer for about 10-12 minutes until the mixture thickens and resembles a jam.

        - Remove from heat and let it cool completely. You can blend it for a smoother texture if preferred.

          Prepare the Yogurt Mixture:

            - In a mixing bowl, combine the Greek yogurt and vanilla extract. Stir until smooth and well combined.

              Assemble the Coins:

                - Line a baking sheet with parchment paper. Using a tablespoon or small ice cream scoop, drop spoonfuls of the yogurt mixture onto the parchment, ensuring they are spaced apart.

                  - Create an indentation in the center of each yogurt coin using the back of a spoon to hold the jam.

                    Fill with Jam:

                      - Spoon a small amount of the cooled strawberry jam into the indentations of each yogurt coin.

                        Freeze:

                          - Place the baking sheet in the freezer and freeze for at least 3-4 hours, or until the coins are completely solid.

                            Serve:

                              - Once frozen, peel the yogurt coins off the parchment paper and serve immediately. You can optionally top them with crushed nuts or granola for extra crunch.
