Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup fresh strawberries, hulled and sliced

1/4 cup honey or maple syrup (adjust for sweetness)

2 tablespoons poppy seeds

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Instructions

Prepare Your Strawberries: In a blender or food processor, add the sliced strawberries and blend until smooth. If desired, leave some small chunks for texture. Set aside a few slices for garnish.

Mix the Yogurt Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Stir until well combined and the mixture is smooth.

Swirl in the Strawberries: Gently fold the pureed strawberries into the yogurt mixture, creating a marbled effect. Be careful not to mix it too thoroughly; you want to see beautiful swirls of strawberry throughout the yogurt.

Add Poppy Seeds: Sprinkle the poppy seeds over the yogurt-strawberry mixture and fold them in gently until evenly distributed.

Form Coins: Lay a piece of parchment paper on a baking sheet. Use a teaspoon or small cookie scoop to drop dollops of the yogurt mixture onto the parchment, forming round coins. Flatten each dollop slightly to create a coin shape. Leave some space between each one as they will spread slightly.

Freeze: Place the baking sheet in the freezer for about 2-3 hours or until the yogurt coins are completely frozen.

Serve: Once frozen, carefully remove the coins from the parchment paper. Place them in an airtight container with parchment paper in between layers to prevent sticking. Serve them directly from the freezer or garnish with fresh strawberry slices and mint leaves for an elegant touch.

Enjoy: These frozen yogurt coins can be enjoyed as a refreshing snack on a hot day or as a delightful dessert.
