1 tablespoon baking powder

1/4 cup unsalted butter, melted

1 large egg

1 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1 cup mixed fresh fruits (strawberries, blueberries, diced kiwi, and banana)

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon lemon juice

Optional: Zest of 1 lemon for added flavor

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, salt, and cinnamon until well combined.

      Mix Wet Ingredients: In a separate bowl, combine the melted butter, egg, milk, and vanilla extract. Whisk the mixture until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; a few lumps are perfectly fine.

          Fold in Fruits: Gently fold in the mixed fresh fruits, ensuring they are evenly distributed throughout the batter.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

              Bake Muffins: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
