Ingredients

8 oz linguine pasta

1 lb large shrimp, peeled and deveined

6 tbsp unsalted butter, divided

4 cloves garlic, minced

1 small red chili pepper, finely chopped (or 1/4 tsp red pepper flakes)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and black pepper to taste

Freshly grated Parmesan cheese, for serving

Instructions

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine and set aside.

Prepare the Shrimp: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the shrimp, season with salt and pepper, and cook until they’re pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

Make the Garlic Butter Sauce: In the same skillet, add the remaining 4 tablespoons of butter. Once melted, stir in the minced garlic and chopped chili pepper. Sauté for about 1 minute or until the garlic is fragrant but not browned.

Add Wine and Lemon: Pour in the white wine, lemon juice, and lemon zest. Stir to combine, and let the mixture simmer for 2-3 minutes to reduce slightly, allowing the flavors to meld.

Combine It All: Return the cooked shrimp to the skillet, along with the drained linguine. Toss everything together, adding reserved pasta water a little at a time until the desired sauce consistency is achieved.

Finish with Herbs: Stir in the fresh parsley and adjust seasoning with salt and pepper as needed.

Serve: Plate the linguine and shrimp, garnishing with additional parsley and freshly grated Parmesan cheese. Enjoy your delicious Garlic Butter Shrimp Scampi Linguine!
