1 lb (450g) large shrimp, peeled and deveined

2 medium zucchinis, spiralized or riced

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon olive oil

1 teaspoon paprika

Salt and pepper to taste

1 lemon, juiced and zested

1/4 cup fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season with salt, pepper, and paprika; set aside.

    Cook the Zucchini Rice: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the spiralized or riced zucchini. Sauté for about 2-3 minutes until just tender. Season lightly with salt and pepper. Remove from the skillet and set aside.

      Make Garlic Butter: In the same skillet, add the butter and let it melt over medium heat. Once melted, add the minced garlic and red pepper flakes. Sauté for 1-2 minutes until the garlic is fragrant, being careful not to burn it.
