1 lb gnocchi (store-bought or homemade)

4 tablespoons unsalted butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 cup spinach, fresh or baby

1 bell pepper (red or yellow), diced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper, to taste

1/4 cup grated Parmesan cheese (optional)

Fresh basil leaves, for garnish (optional)

Red pepper flakes (optional, for some heat)

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a boil. Once boiling, add the gnocchi. Cook according to package instructions. When they float to the top, they are done (typically 2-3 minutes). Drain and set aside.

    Sauté the Veggies: In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Combine the Veggies: Add the cherry tomatoes, zucchini, bell pepper, and Italian herbs to the skillet. Sauté for about 5-7 minutes until the vegetables are tender and vibrant in color.

        Add the Gnocchi: Gently fold the cooked gnocchi into the skillet with the sautéed vegetables. Stir to combine and cook for an additional 2-3 minutes, allowing the gnocchi to absorb some of the garlic butter flavor.

          Incorporate Spinach: Add the fresh spinach to the skillet. Stir until just wilted, about 1-2 minutes. Season with salt and pepper to taste.
