14 oz firm tofu, pressed and drained

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup fresh spinach leaves

1 cup shredded carrots

1 avocado, sliced

½ cup hummus or your favorite spread

¼ cup fresh parsley, chopped (for garnish)

Optional: Hot sauce for serving

Prepare the Tofu: Cut the pressed tofu into 1-inch cubes. In a mixing bowl, combine the olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and pepper to create a marinade.

    Marinate the Tofu: Gently toss the tofu cubes in the marinade until evenly coated. Allow it to marinate for at least 20 minutes for the flavors to penetrate, or refrigerate for up to 2 hours for a deeper flavor.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) while the tofu is marinating.

        Air Fry the Tofu: Place the marinated tofu cubes in the air fryer basket in a single layer. Cook for 15-18 minutes, shaking the basket halfway through, until the tofu is golden and crispy.

          Assemble the Wraps: Lay out the tortillas on a clean surface. Start by spreading a generous layer of hummus on each tortilla. Add a handful of fresh spinach leaves and a portion of shredded carrots to each.

            Add Tofu and Avocado: Once the tofu is done cooking, add a layer of crispy tofu cubes on top of the veggies and finish with slices of avocado.

              Roll the Wraps: Carefully roll up each tortilla tightly, tucking in the sides as you go to ensure all the fillings stay inside. If desired, secure with a toothpick.
