Garlic Herb Chicken Meatballs

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh basil, chopped

1 large egg

1 tsp onion powder

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1/4 cup milk

Olive oil for frying

Instructions
 

In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, chopped basil, egg, onion powder, oregano, salt, and black pepper.

    Pour in the milk and mix all the ingredients together until well combined. You can use your hands or a spatula for this step. Ensure that the mixture is moist but not too sticky.

      Preheat a large skillet over medium heat and drizzle with olive oil.

        Wet your hands slightly with water and shape the chicken mixture into meatballs, about 1 to 1.5 inches in diameter.

          Once the skillet is hot, gently place the meatballs in the pan, making sure not to overcrowd. Cook for 6-8 minutes, turning occasionally, until they are golden brown on all sides and have reached an internal temperature of 165°F (74°C).

            Optional: For added flavor, consider adding chopped extra herbs or a splash of lemon juice while sautéing the meatballs.

              Remove the meatballs from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

                Serve immediately, garnished with additional fresh herbs or a sprinkle of Parmesan cheese if desired. Enjoy with pasta, in a sub, or as a hearty appetizer!
