4 catfish fillets (about 6 oz each)

1 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon lemon zest

1/2 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

2 tablespoons Dijon mustard

2 tablespoons olive oil

Lemon wedges, for serving

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

    Prepare the Herb Mixture: In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, minced garlic, parsley, dill, lemon zest, smoked paprika, salt, and black pepper. Mix well to integrate all ingredients evenly.

      Make the Egg Mixture: In another bowl, whisk together the egg and Dijon mustard until smooth.

        Coat the Catfish Fillets: Dip each catfish fillet first into the egg mixture, ensuring it's fully coated, and then press it into the breadcrumb mixture, making sure to cover both sides. The mixture should adhere well.
