2 pounds baby potatoes (Yukon Gold or red)

1/2 cup mayonnaise

1/4 cup Greek yogurt

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh dill, finely chopped

1 tablespoon fresh chives, finely chopped

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and pepper to taste

Optional: 1/4 cup diced red onion for an added crunch

Prepare the Potatoes: Wash and scrub the baby potatoes. Place them in a large pot and cover with cold water. Add a generous pinch of salt. Bring to a boil and cook for about 15–20 minutes or until fork-tender. Drain and allow to cool slightly.

    Make the Dressing: In a mixing bowl, whisk together mayonnaise, Greek yogurt, minced garlic, apple cider vinegar, Dijon mustard, salt, and pepper. Stir in the chopped parsley, dill, and chives until evenly combined.

      Combine Potatoes and Dressing: Once the potatoes have cooled enough to handle, cut them into halves or quarters (depending on size). In a large bowl, gently toss the warm potatoes with the dressing. If using, add the diced red onion for additional texture.

        Chill: Cover the potato salad with plastic wrap and refrigerate for at least 1 hour. This allows the flavors to meld beautifully. For best results, prepare the salad a few hours or the night before.
