1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

4 large whole wheat or spinach tortillas

1 cup mixed greens (e.g., spinach, arugula, or lettuce)

1 cup cherry tomatoes, halved

½ cucumber, sliced

½ red onion, thinly sliced

½ cup feta cheese, crumbled (optional)

¼ cup tahini

Juice of 1 lemon

1 tablespoon water (optional, for thinning tahini)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chickpeas: In a bowl, combine the drained chickpeas, olive oil, garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, and a sprinkle of salt and pepper. Toss until the chickpeas are evenly coated.
