Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

A pinch of red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Chickpeas: After draining and rinsing the chickpeas, spread them out on a clean kitchen towel or paper towels. Pat them dry to remove excess moisture, which will help them get crispy.

Season the Chickpeas: In a large bowl, combine the dried chickpeas, olive oil, minced garlic, smoked paprika, dried oregano, dried thyme, salt, black pepper, and red pepper flakes (if using). Toss until the chickpeas are well-coated with the oil and spices.

Roast the Chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they are not crowded to allow even roasting.

Bake: Roast in the preheated oven for 25-30 minutes, stirring halfway through. Keep an eye on them starting around 20 minutes to ensure they don’t burn. They should be golden and crispy.

Cool and Garnish: Once done, remove the chickpeas from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving.

Serve: Enjoy your Garlic Herb Roasted Chickpeas as a snack, add them to salads for a crunchy topping, or use them as a healthy appetizer!
