Garlic Parmesan Chicken Meatloaves

1 lb ground chicken

1 cup breadcrumbs (preferably Panko for extra crunch)

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

4 cloves garlic, minced

1 large egg

1/2 cup milk

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1/2 cup marinara sauce (for glaze)

Extra Parmesan cheese (for topping)

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, egg, milk, Italian seasoning, salt, and black pepper.

      Form the Meatloaves: Using your hands or a spatula, mix the ingredients gently until just combined. Be careful not to overmix, as this can make the meatloaf tough.

        Shape Meatloaves: Divide the mixture into 4 equal portions and shape them into small loaves (about 4 inches long). Place them on the prepared baking sheet.

          Add Marinara Sauce: Spoon marinara sauce over the top of each meatloaf, making sure to cover them nicely. This will add flavor and moisture during cooking.

            Top with Cheese: Sprinkle a little extra Parmesan cheese over the marinara sauce on each meatloaf for that cheesy finish.

              Bake: Bake in the preheated oven for 25-30 minutes, or until a meat thermometer reads 165°F (74°C) when inserted into the center of the meatloaf.

                Rest & Serve: Once done, remove from the oven and let the meatloaves rest for about 5 minutes before serving. This allows the juices to redistribute, keeping them juicy.

                  Garnish: Serve hot, garnished with some extra chopped parsley if desired.
