2 cups rotini pasta

1 lb (450g) boneless, skinless chicken breasts, diced

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and black pepper to taste

1 cup heavy cream

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup spinach (fresh or frozen)

½ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the rotini according to package instructions until al dente. Drain and set aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with Italian seasoning, salt, and pepper. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

        Make the Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the mozzarella cheese and Parmesan cheese until melted and combined. Add the spinach and stir until wilted (if using fresh) or heated through (if using frozen). If desired, sprinkle in red pepper flakes for some heat.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta with the chicken and cheese sauce. Toss until everything is well-coated.
