Garlicky Roasted Tomato & Mozzarella Toasts

Ingredients
  

1 pound (450g) cherry tomatoes, halved

3 tablespoons olive oil, divided

6 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon balsamic vinegar

Salt and pepper, to taste

8 slices of rustic bread (such as sourdough or ciabatta)

8 ounces (225g) fresh mozzarella cheese, sliced

Fresh basil leaves, for garnish

Red pepper flakes, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Tomatoes: In a large bowl, combine the halved cherry tomatoes, 2 tablespoons of olive oil, minced garlic, dried oregano, balsamic vinegar, and a generous pinch of salt and pepper. Toss until the tomatoes are well coated.

      Roast the Tomatoes: Spread the tomato mixture in a single layer on a baking sheet. Roast in the preheated oven for about 25–30 minutes, or until the tomatoes are caramelized and bubbly.

        Toast the Bread: While the tomatoes are roasting, place the slices of rustic bread on another baking sheet. Brush each slice with the remaining 1 tablespoon of olive oil. Toast in the oven for about 8–10 minutes, or until golden and crispy, flipping halfway through.

          Assemble the Toasts: Once the tomatoes are out of the oven, remove the toasted bread. Layer slices of fresh mozzarella on each toast while they are still warm, allowing the cheese to slightly melt.

            Top with Tomatoes: Spoon the roasted tomato mixture generously over the mozzarella-topped bread.

              Garnish: Finish with fresh basil leaves and add a sprinkle of red pepper flakes if you like a bit of heat.
