Ingredients

For the Meatballs:

1 lb ground beef (or ground turkey for a lighter option)

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 large egg

1 tablespoon soy sauce

1 teaspoon sesame oil

1/2 teaspoon black pepper

1/2 teaspoon salt

For the Ginger Soy Glaze:

1/3 cup soy sauce

1/4 cup honey

1 tablespoon rice vinegar

1 tablespoon fresh ginger, grated

1 teaspoon cornstarch mixed with 2 tablespoons water (for thickening)

1 tablespoon sesame seeds (for garnish)

Extra chopped green onions (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Meatball Mixture: In a large mixing bowl, combine the ground beef (or turkey), breadcrumbs, chopped green onions, minced garlic, grated ginger, egg, soy sauce, sesame oil, black pepper, and salt. Mix gently with your hands or a spatula until just combined; do not overmix.

Form the Meatballs: Scoop out heaping tablespoons of the mixture and roll them into balls about 1 inch in diameter. Place them on the prepared baking sheet, spacing them about an inch apart.

Bake the Meatballs: Bake in the preheated oven for 15-20 minutes, or until browned and cooked through (internal temperature should reach 160°F or 70°C).

Make the Ginger Soy Glaze: While the meatballs are baking, prepare the glaze. In a small saucepan over medium heat, combine the soy sauce, honey, rice vinegar, and grated ginger. Bring to a simmer, then stir in the cornstarch mixture. Cook for an additional 1-2 minutes, stirring frequently, until the glaze thickens.

Glaze the Meatballs: Once the meatballs are done, remove them from the oven and place them in a large mixing bowl. Pour the ginger soy glaze over the meatballs and toss gently to coat them evenly.

Serve: Transfer the glazed meatballs to a serving platter. Garnish with sesame seeds and additional chopped green onions. Serve hot with your choice of rice or noodles, or as an appetizer!
