2 cups cooked ramen noodles

1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 tablespoon fresh ginger, minced

3 cloves garlic, minced

½ cup teriyaki sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 cup broccoli florets

1 cup baby spinach

1 cup shredded carrots

½ cup green onions, sliced (plus extra for garnish)

1 cup shredded mozzarella cheese

1 cup panko breadcrumbs

2 tablespoons sesame seeds

Preheat the oven: Preheat your oven to 375°F (190°C) and grease a large baking dish.

    Prepare the chicken: In a skillet over medium-high heat, add sesame oil and heat for a minute. Add the minced ginger and garlic, stirring constantly for about 30 seconds until fragrant. Add the chicken pieces, season with salt and pepper, and cook until browned on all sides (about 5-7 minutes).
