4 bone-in, skin-on chicken thighs

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Zest of 1 lemon

½ cup chicken broth

½ cup unsalted butter (1 stick), cut into cubes

Juice of 1 lemon

2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides generously with salt and freshly ground black pepper.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down. Cook for about 5-7 minutes until the skin is golden brown and crispy. Flip the chicken thighs over and cook for an additional 5 minutes. Remove the chicken from the skillet and set aside on a plate.

      Make the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the thyme, lemon zest, and chicken broth, scraping the bottom of the skillet to deglaze and incorporate the flavorful bits.

        Add Lemon and Butter: Lower the heat to medium-low. Gradually whisk in the cubed butter, one piece at a time, until fully incorporated and the sauce is creamy. Stir in the lemon juice, mixing to combine.

          Return the Chicken: Place the chicken thighs back into the skillet, skin-side up, ensuring they are coated with the sauce. Cover the skillet and let the chicken simmer in the sauce for about 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
