1 medium head of cauliflower, cut into bite-sized florets

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon cayenne pepper (optional, for heat)

Salt and pepper, to taste

8 small corn tortillas

1 cup red cabbage, thinly sliced

1 avocado, sliced

½ cup fresh cilantro, roughly chopped

1 lime, cut into wedges

½ cup feta cheese or a dairy-free alternative (optional)

Your favorite hot sauce (for serving)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Season the Cauliflower: In a large bowl, combine the cauliflower florets with olive oil, smoked paprika, cumin, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Toss well to ensure all florets are evenly coated.

      Roast the Cauliflower: Spread the seasoned cauliflower evenly on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, tossing halfway through for even roasting.

        Warm the Tortillas: While the cauliflower is roasting, heat a dry skillet over medium heat. Warm the corn tortillas for about 30-60 seconds on each side until pliable. Keep them warm in a clean kitchen towel.
