400g grated carrots (about 4 medium carrots)

200g all-purpose flour

300g granulated sugar

4 large eggs

200ml vegetable oil

2 tsp baking powder

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

100g crushed walnuts or pecans (optional)

100g raisins or sultanas (optional)

For the Cream Cheese Frosting:

250g cream cheese, at room temperature

100g unsalted butter, softened

400g powdered sugar

1 tsp vanilla extract

Zest of 1 orange (optional, for added flavor)

For Garnishing:

Extra crushed walnuts or pecans

Fresh orange zest

Preheat the Oven: Preheat your oven to 180°C (350°F). Grease and line two 8-inch round cake pans with parchment paper.

    Prepare the Carrots: Peel and grate the carrots using a medium grater. Set aside.

      Mix wet Ingredients: In a large mixing bowl, whisk together the eggs and granulated sugar until light and fluffy. Gradually mix in the vegetable oil.

        Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture and mix until just combined. Be careful not to overmix!

            Fold in Carrots and Optional Ingredients: Gently fold the grated carrots and optional walnuts/pecans and raisins into the batter until evenly distributed.

              Bake the Cakes: Divide the batter equally between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
