8 oz (225g) pasta (orzo, fusilli, or penne)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/2 red onion, thinly sliced

1 cup kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

Salt and pepper to taste

For the Tzatziki Dressing:

1 cup Greek yogurt

1 medium cucumber, grated and drained

2 cloves garlic, minced

1 tbsp olive oil

1 tbsp lemon juice

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

Salt and pepper to taste

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooking, prepare the vegetables. In a large mixing bowl, combine the cherry tomatoes, diced cucumber, bell pepper, red onion, and kalamata olives.

      Make the Tzatziki Dressing: In a separate bowl, mix together the Greek yogurt, grated cucumber (drained of excess moisture), minced garlic, olive oil, lemon juice, and dill. Season with salt and pepper to taste. You can adjust the garlic and dill according to your preference.

        Combine Ingredients: Once the pasta is cooled, add it to the bowl with the vegetables. Gently fold in the crumbled feta cheese, fresh parsley, and mint.
