Greek Yogurt Banana Oatmeal Muffins

1 cup rolled oats

1 cup mashed ripe bananas (about 2 medium bananas)

1 cup plain Greek yogurt

1/2 cup honey or maple syrup

1/4 cup coconut oil, melted (or unsalted butter)

1 tsp vanilla extract

2 large eggs

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup chopped walnuts or pecans (optional)

1/2 cup dark chocolate chips or dried fruit (optional)

Instructions
 

Preheat Your Oven: Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Prepare Oats: In a medium bowl, combine the rolled oats with 1 cup of milk (dairy or non-dairy). Let it soak for about 10 minutes while you prepare the other ingredients.

      Mix Wet Ingredients: In a large mixing bowl, whisk together the mashed bananas, Greek yogurt, honey or maple syrup, melted coconut oil, vanilla extract, and eggs until well combined.

        Combine Dry Ingredients: In another bowl, mix the baking soda, baking powder, salt, and ground cinnamon. Add the soaked oats (with any remaining milk) to the wet ingredients and stir well.

          Combine All Ingredients: Gradually add the dry mixture to the wet mixture, mixing until just combined. Avoid overmixing. If using walnuts, pecans, chocolate chips, or dried fruit, gently fold them into the batter.

            Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tins, filling each cup about 2/3 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Cool and Serve: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or store them in an airtight container for up to a week!
