Ingredients

2 cups cooked chicken breast, shredded

1 cup Greek yogurt (plain, full-fat or low-fat)

1/2 cup celery, finely chopped

1/2 cup red grapes, halved

1/4 cup red onion, finely diced

1/4 cup slivered almonds (toasted for extra flavor)

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 tablespoon honey or maple syrup (for subtle sweetness)

1 tablespoon Dijon mustard

Salt and pepper to taste

Optional: 1 tablespoon lemon juice for a tangy kick

Lettuce leaves or whole-grain bread for serving

Instructions

Prepare the Chicken: If you haven’t done so already, cook the chicken breast (boil, grill, or roast) until fully cooked. Let it cool, then shred it into bite-sized pieces.

Mix the Dressing: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), Dijon mustard, lemon juice (if using), salt, and pepper. Stir until the mixture is smooth and well blended.

Combine Ingredients: Add the shredded chicken, chopped celery, halved grapes, red onion, and fresh dill to the bowl with the yogurt dressing. Gently fold the mixture until everything is evenly coated with the dressing.

Add Crunch: Fold in the toasted slivered almonds to add a delightful crunch.

Taste and Adjust: Taste the mixture and adjust the seasoning if necessary. You can add more salt, pepper, or dill according to your preference.

Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.

Serve: Serve the Greek yogurt chicken salad on a bed of lettuce leaves as a light lunch or scoop it between whole-grain bread for a delicious sandwich. Enjoy your meal!
