Ingredients

2 cups Greek yogurt (plain or vanilla)

1 cup pumpkin puree (canned or homemade)

1/4 cup honey or maple syrup (adjust to taste)

1 tsp vanilla extract

2 tsp pumpkin pie spice (plus extra for garnish)

1 cup granola (your choice or homemade)

1/2 cup chopped nuts (walnuts or pecans work well)

Fresh fruit (like bananas or apples) for topping

Optional: Whipped cream for extra indulgence

Instructions

Prep the Yogurt Mixture: In a medium bowl, combine the Greek yogurt, pumpkin puree, honey (or maple syrup), vanilla extract, and pumpkin pie spice. Mix well until all ingredients are smooth and evenly incorporated. Taste and adjust sweetness if desired.

Layer the Parfait: In serving glasses or bowls, start with a layer of the yogurt-pumpkin mixture (about 1/3 of the mixture in each glass).

Add Granola: Spoon a layer of granola over the yogurt mixture, about 1/4 cup per glass.

Repeat Layers: Continue layering with another portion of the yogurt-pumpkin mixture followed by another layer of granola. You should have at least two layers of each.

Top with Toppings: After the final layer of yogurt, sprinkle the chopped nuts over the top. Add a dollop of whipped cream if desired and garnish with a sprinkle of pumpkin pie spice and a slice of fresh fruit.

Chill and Serve: For best results, let the parfaits chill in the fridge for 30 minutes before serving to let the flavors meld. Serve cold and enjoy your delicious seasonal treat!
