Ingredients

1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

2 large eggs

1/4 cup melted butter

1 cup diced green chilies (canned or fresh)

1 cup shredded sharp cheddar cheese

1/2 cup corn kernels (fresh or frozen)

1/4 teaspoon cayenne pepper (optional, for extra heat)

Fresh chives or cilantro, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with paper liners.

Mix Dry Ingredients: In a large mixing bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, salt, and cayenne pepper (if using) until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, eggs, and melted butter until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; a few lumps are fine.

Add the Good Stuff: Gently fold in the diced green chilies, shredded cheddar cheese, and corn kernels until evenly distributed throughout the batter.

Fill the Muffin Tin: Using a spoon or a scoop, fill each mini muffin cup about 2/3 full with the cornbread batter.

Bake the Muffins: Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cool and Garnish: Remove the muffin bites from the oven and let them cool in the tin for a few minutes. Then, transfer them to a wire rack to cool completely. Before serving, garnish with chopped chives or cilantro for a burst of freshness.

Serve: Enjoy these deliciously spicy cornbread muffin bites warm as a fantastic side to your favorite chili, soup, or as a stand-alone snack!
