1 medium sweet potato, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1-2 fresh green chilies, seeded and finely chopped (adjust based on heat preference)

6 large eggs

1/2 cup whole milk

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup spinach, chopped

1/2 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

Fresh cilantro, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Sweet Potatoes: In a large, oven-safe skillet, heat the olive oil over medium heat. Add the diced sweet potatoes and a pinch of salt. Cook for about 10 minutes, stirring occasionally, until they begin to soften.

      Add Aromatics: Add the chopped onion and green chilies to the skillet. Sauté for another 5 minutes until the onions are translucent. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Prepare Egg Mixture: In a mixing bowl, whisk together the eggs, milk, cumin, smoked paprika, salt, and pepper until well combined.

          Combine Ingredients: Pour the egg mixture over the sweet potato and onion mixture in the skillet. Sprinkle the chopped spinach evenly on top, followed by crumbled feta cheese if using. Gently stir to combine the ingredients.
