Green Chili Turkey Breakfast Skillet

Ingredients
  

1 lb ground turkey

1 can (4 oz) diced green chilies, drained

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt (or to taste)

½ tsp black pepper (or to taste)

4 large eggs

1 cup fresh spinach, chopped

2 tbsp olive oil

¼ cup shredded cheddar cheese, for topping

Fresh cilantro or parsley, for garnish

Instructions
 

Preheat Your Skillet: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Once hot, add the diced onion and bell pepper. Sauté for about 4-5 minutes, or until they become soft and translucent.

    Brown the Turkey: Push the veggies to one side of the skillet. In the empty space, add the ground turkey. Cook, breaking it apart with a spatula and stirring occasionally, until browned and cooked through, about 6-7 minutes.

      Season the Mixture: Stir in the minced garlic, diced green chilies, cumin, smoked paprika, salt, and black pepper. Cook for an additional 2-3 minutes to allow the flavors to meld.

        Add Spinach: Stir in the chopped fresh spinach and cook until it wilts, about 1-2 minutes. Once combined, ensure the turkey mixture is spread evenly across the skillet.

          Create Wells for the Eggs: Use the back of a spoon to create four wells in the turkey mixture.

            Crack the Eggs: Carefully crack an egg into each well. Reduce the heat to low, cover the skillet with a lid, and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny. For firmer yolks, cook a few minutes longer.

              Finish and Serve: Once the eggs are cooked to your liking, remove from heat. Sprinkle shredded cheddar cheese on top and cover for 1-2 minutes until melted. Garnish with fresh cilantro or parsley.
